My kids love Singapore Noodles and the Chow Mein served at the Chinese restaurants and they pestered me to make them at home. I managed to learn the recipe from the culinary sites on the net and most of them mentioned that a thick bottom wok is a must for getting the real authentic Chinese taste. It seems that traditional Chinese and Asian recipes are directly cooked at high temperature and the perfect temperature plays a crucial role in bringing out the genuine taste. I was confused about the wok and finally settled with the Helen Chen's Flat Bottom Carbon Steel Wok Set.

I have heard about the famous Chinese Restaurateur Joyce Chen before but Helen Chen did not ring a bell. When I raised my doubt to the sales girl in the supermarket, she corrected me that Helen is the daughter of Chen. So I bought the Helen Chen's Wok expecting it to show superior performance. The Chen's have a reputation to keep and I was disappointed to see the fall in quality. This set consists of a 14 inch wok, dome shaped metallic lid and a 13 cinch long bamboo stick. The 14 inch Wok comes with a flat base making it stable. This sits safely on gas and does not even need a burner ring. Chinese cooking needs lot of vigorous shoveling, stirring, mixing and the perfectly flat smooth surface base never allow the wok to skid or slip from the gas top.

I also like the dome shape as it creates extra space and bamboo two tier steamers can be inserted inside the wok. It also facilitates to lock more moisture and this accelerates the rate of cooking. Another good feature is that the edges of the wok are slanting deep and this offers more heating surface. The carbon steel is one of the best thermal conductors and the wok gets heated up easily. What I like the most about this Wok is that it is not a non stick pan that is it does not come with chemical non stick coating material. So this can be used at extremely high temperature without fearing about peeling of Teflon coating. Seasoning is simple and all you have to do is to grease the pan adequately.

This is no doubt functionally competent but the problem with this wok is that it gets rusted soon. I have used it only thrice in the last couple of months and by far this works fine though I have to season it every time. The Helen Chen's Wok is made from 1.6 mm carbon steel and I guess it is because of the poor quality of the cast iron that it gets rusted soon. The first time I used, I left it soaked with water overnight for effortless cleaning but the next morning I was shocked to find the rust marks on it. However the rust was easy to remove and it was like a powder. To be on safer side I seasoned it again and stored in the cabinet. When I took it back after a week there were new rust spots near the handle and base. Again I had to season it. The only disgusting thing with the Helen Chen's Wok is that it has to be seasoned frequently.

Lay your paper pattern down on top of your stainless steel or other sheet metal and cut out your pattern. Use goggles and a strong sander to lightly buff the edges so that they are not razor blade sharp from the backside of you back splash.

DIY Idea: If you are making a copper back splash, you can use leather working stamps or a ball-ping hammer to tap in a nice raised decorative pattern if you would like.

Your stainless steel metal back splash is glued to the wall with either silicone caulk or a product called Liquid Nails that fits into your caulk gun. Draw a thin like of caulk slightly in from your stainless steel back splash edges and squiggle the rest of the caulk around in the center of your stainless steel until there is enough to hold it to the wall.

Put your stainless steel back splash onto the wall pressing from the bottom towards the top; excess caulk may come out of the top as you press, remove that with a damp wad of paper towels. Once the stainless steel back splash is in position on your wall, use Gorilla brand extra-sticky tape to hold the unit in place for 24-48 hours while the caulk dries.

DIY Idea: Some people like to caulk the edges of their stainless steel back splash. Use tape to make straight lines, or transfer caulk into a disposable cookie decorating tool icing bag and squirt onto your stainless steel back splash edges with the tiny cookie tip included in the disposable set. The cookie set is generally cheaper than buying tape rolls.

DIY Idea: Some people prefer a pretty decorative metal trim around the edges of their new stainless steel back splash. A company online called VanDykes Restorers carries decorative metal trim strips for restoring old trunks. These come in many styles, glue up the same way as the back splash did, and look very nice as trim on a back splash.

DIY Idea: While exploring choices in metal back splash material, don't forget to look at raised pattern ceiling metal designer-styles choices. Raised pattern stainless steel back splashes will not show the dirt as quickly as a shiny flat piece of metal will. They are harder to clean, but for some lifestyles hiding the dirt is nicer than constant cleaning.
